At Hiroki, the cooks prepare the Okonomiyakis right in front of you. The table is basically the grill with about half a foot of space for plates and other utensils. You can see every step of the cooking and flavouring as they put one ingredient after another. When the Okonomiyaki is finished, it is pushed in front of you while still being on the grill for it to stay warm. With the grill right in front, the aroma of the Okonomiyaki rushes straight into my nose. Ahhh. The smell of umami.
The Vegetable Okonomiyaki includes leeks, cabbage, and nori topped with Kannon green onions. Surprisingly, it was full of flavour even when it’s all vegetables. It was cooked perfectly at the correct heat and timing. Crunchy on the outside with a soft and chewy inside.
The Seafood Modern Okonomiyaki includes scallops, shrimp, and squid. The noodles were cooked to al dente topped with a crispy layer of savory pancake. The top was coated with a brush of housemade sauce which tasted similar to teriyaki sauce. Every bite filled my mouth full of flavours.
